One of my favorite resorts is Animal Kingdom Lodge. I love that it is tucked away on property, but offers one of the most unique resort experiences with views of a variety of animals grazing about its grounds. I decided to grab a quick bite at The Mara for breakfast before heading to Animal Kingdom for the morning. I opted to try their Croissant Sandwich. It consists of scrambled eggs, cheese, and bacon all on a croissant. (I know, I’m sure that was a big surprise 
)
The sandwich was assembled from items sitting in a hot bar, much like you would find on a buffet line. This can sometimes be a kiss of death for items like eggs, drying them out, but that was not the case here. The scrambled eggs were some of the best I’ve had; they were very fluffy and the portion was very generous. The croissant itself was quite flaky, buttery, and very fresh.
While I would have preferred the bacon to be crispier and the overall sandwich to have been a bit warmer, it was a fantastic start to my morning. It was nice to grab the sandwich and sit outside before the temperature got too high. This will certainly gain a spot in my growing list of breakfast options, especially before spending a day at Animal Kingdom.
