Capt. Cook’s Lemon Ginger Cupcake

With most of the parks hitting capacity recently, I decided it would be a great time to explore the resorts. I did a monorail and boat tour (for Wilderness Lodge and Fort Wilderness) to get some photos. One of my stops along the monorail was the Polynesian. I headed downstairs to Capt. Cook’s and spotted a couple “gourmet” cupcakes at $3.99 each. The options were Chocolate-Macadamia Nut and Lemon Ginger. Not being big on sweets, the Lemon Ginger Cupcake sounded appealing; more like a muffin that a cupcake. Since they are packaged in sturdy plastic, the worst that could happen was that I’d bring the remainder home for Matt to try.

The cupcake display was a very fair representation of what is actually served. This one was one of the more evenly-toasted of the meringues.

The cake stuck to the paper a little, but minimal damage occurred.

I wasn’t acticipating a filling in the cupcake, which was a pleasant surprise. The meringue had a bright lemony flavor, as did the filling. The bread was moist and none of the components were overly sweet.

I didn’t really taste any ginger notes. The cupcake in general reminded me of a lemon meringue pie in cupcake form.

I’m happy to say that I really enjoyed this cupcake. I even brought some home for Matt to try, and he thought it was pretty good too. It’s likely a variety of cupcake that gets switched up now and again with a different flavor, so I’ll have to keep an eye out it I want to order one again.  Which I do. :)
