Sunshine Tree Terrace: Asian Pineapple Salad

A few weeks ago, we tried the amazing Citrus Swirl from Sunshine Tree Terrace while it was still under refurbishment. Now that it’s fully open, and looking darn good might I add, we stopped by to try one of their new salads! But first, a look at the shiny, new façade and decor. Love it!

Onto the food! Currently, their entrees are served from 11am-4pm, and include Orange Glazed Chicken with Rice, Asian Barbecued Pork Sandwich, Tuna Salad Croissant, Asian Salad with Chicken, and an Asian Pineapple Salad. Click the menu below for a closer look!

I know that Matt will likely want to sample the Pork Sandwich one of these days in the near future, so I figured I’d save that for him and go with the simple Asian Pineapple Salad ($7.89).

Iceberg lettuce is mixed with shredded carrot, shredded red cabbage, diced cucumber, and diced cantaloupe. At first I thought the cantaloupe was some sad looking tomato, so I was happy when I tasted one to find this was not the case!

On top of the bed of lettuce and several chunks of fresh pineapple…

…and grapes.

I have to say the best part of this salad was the fruit. It was refreshing, so much that I would have been happy with JUST the bowl of fruit. I saw that primarily because of the dressing. The dressing really didn’t pair well with the fruit. It tasted like a soy-sesame-ginger concoction and was a bit heavy. Kind of sweet, but a bit too savory for the fruit. After eating the fruit, I tried it on just the greens, but it didn’t quite meld well there either. Perhaps with the chicken it would have made more sense as it tasted more like a marinade than a dressing. Due to the fruit, I personally think that a balsamic glaze would be more fitting, or a fruity vinaigrette, but that steps away from the Asian influence.

Still, I thought it was a good salad; large and filling. I had visited the restaurant just after opening, so the salad came right out from the kitchen. My last few visits to the establishment had been a bit slow, even for just a soda, so this was a plus. I look forward to heading back over with Matt to try some of the other new items!
