Copper River Salmon Returns to Artist Point, Flying Fish Cafe and California Grill

Copper River Salmon is returning to the menus at Artist Point, Flying Fish Cafe and California Grill, reports the Disney Parks Blog. This salmon is available typically from mid-May to mid-June. The fish travel up the Copper River in South Central Alaska each year – a distance of roughly 3,200 miles – to spawn. Known as Chinook and Tyees in Alaska, the largest on record weighed in at 126 pounds.

Each restaurant boasts a different preparation. Artist Point (Wilderness Lodge) uses their cedar planks, while the California Grill (Contemporary Resort) will be serving it “a la plancha,” grilled on a metal plate, possible alongside local Zellwood corn. Still no word on what the chefs have in store at Flying Fish Cafe (BoardWalk Inn).
